Gelatine sheet, also known as leaf gelatine, is a transparent thin sheet. The common specification is 5g,3.3g,2.5g and 2g.
It is a kind of gum (coagulant) extracted from animal connective tissue (mostly cow skin or fish skin), the main component is protein. It must be soaked in cold water before use, and be melted above 80℃. If the acidity of the solution is too high, it is not easy to freeze, and the finished product must be kept with regrigerated. It will have excellent toughness and elasticity.
Gelatin sheet has many advantages, such as high transparency,odorless and tasteless,fast melting speed,easy to operate and strong gel coagulation.As per its characteristic,it is usually used to making jelly pudding and mousse. For jelly pudding, it is generally recommended to operate in a ratio of 1:16; For mousse, 10g gelatin sheets for 6 inches mousse cake ,20 g gelatin sheets for 8 inches mousse cake.
Storage conditions: Avoid heat, moisture and contact with odorous items when unopened; seal after opening to avoid strong light, moisture and insect damage.
